Ultimate Vegetarian Chili

What you need: 

3 tablespoons olive oil
3 onions, chopped
1 tablespoon chili powder
1 tablespoon ground cumin
1/4 teaspoon cayenne pepper
2 peppers, chopped
3 garlic cloves, chopped
3 tablespoons unsweetened cocoa powder
1 large can (28 ounces) tomatoes, undrained, chopped
1 cup water
1 (15 ounce) can red kidney beans, rinsed and drained
1 (15 ounce)can black beans, rinsed and drained
2 cups fresh or frozen corn
1/2 cup bulgur
salt and pepper, to taste
cilantro, for garnish, optional

What you do: 

1. In a large pan, saute the onions and spices with oil. Add peppers and garlic for 1 minute.
2. Add cocoa, tomatoes, and water; bring to a boil. Add kidney and black beans, corn and bulgur.
3. Reduce heat to low and simmer, uncovered, for 15 minutes. or until bulgur is cooked. Add salt and pepper, to taste. To serve, sprinkle with cilantro.'

SO HOW'D IT GO?

I followed the recipe almost exactly, in terms of ingredients. I didn't add anything, or take anything away, except for measurements. I used only 1 onion and 1 red pepper, since I'm not a huge fan of both.  I also used only 1.5 tablespoons of cocoa, 1 cup corn, 2 garlic cloves and 1.5 tablespoons of oil (since I had less onion and red pepper).

Great recipe! Will use it again. my non-vegan family loved it as well :)

I made some homemade vegan biscuits with this.

I liked this recipe when i first tried it and kept making it quite frequently.  I immediately began making my personal adjustments to it though.  The three tablespoons of cocoa powder seemed a little strong, so first, I cut it back to one.  From then it has been a steady transformation into what is MY ultimate vegetarian chili recipe. I never would've made it without this one to build off of though.  Here are my suggestions:

-Try 1 to 1-1/2 tablespoons of cocoa instead of 3.
-3 or 4 tablespoons of cumin instead of one. Add one while sauteeing the onions, and the other 2 or 3 after ALL ingredients are in the pot.
-2 or 3 tablespoons of chili powder instead of one. Again, put the first in while sauteeing and the rest after all ingredients are added.
-I use 9 or 10 cloves of garlic.  The amount in the recipe is added while sauteeing, the rest later, just like with the chili powder and cumin.
-I put a whole teaspoon of cayenne pepper, sometimes more.
-2 large cans of chopped, undrained tomatos, instead of 1.
-5 cups of vegetarian sausage crumbles.
-2 tsp of ginger
-Instead of the 1 cup of water, I use 2 cups of tomato juice and 1 small can of tomato paste.

The longer you let it simmer, the better.  Try it like this; I promise you won't be sorry!

I made this tonight for dinner... yum! I only used one pepper (because that's all I had), 2 onions extra boulgar, extra 1/2 can of beans and only 2 tbl spoons of cocoa.

Thanks for the great recipe! My first time making chili was a success, everyone loved it. I used TVP and added more spice cuz I like it hot. A-maze-ing!

:hotforyou: This chili is my addiction. I've tried almost every other chili recipe, canned organic chili and NONE of them tasted this amazing. I've already made it 3 times and it last me a week. I love it because i'm the only vegetarian in the family so i can make this and be perfectly fine for so long. I'm taking this with me to college too:) Bellissimo!

This turned out pretty awful for me and I followed the recipe exactly. It is a little too spicy for me, and other than that it seemed to havea bad flavor. I'll probably end up throwing it all out.

;)b ;)b  Not only did I love this recipe, but so did my meat-eating husband who usually grumbles about vegan dishes!  I only used one T of cocoa powder, and I substituted veggie crumbles for the bulgur.  A tasty, easy-to-prepare recipe that can't be beat!

Not too bad. Had to play around with the spices quite a bit to get it right but of course chili is so subjective. Thanks for the recipe.

This stuff is just...AWESOME!!!  I only used 1 onion and 1 pepper, but other than that, followed the recipe exact.  Had a big bowl with vegan sour cream, last night, and made a big Frito Pie with it, tonight - SO DELISH!!!  My husband kept saying "Man, this is so good!".  I got a BIG KISS after this dinner - ha!  :D
