Traditional Swiss Chard and Beans
What you need:
1/2 large onion, diced
garlic, minced, to taste
2 tablespoons olive oil
1 large bunch red (Swiss) chard, chopped
1 (15 ounce) can white or navy beans, drained
salt and pepper, to taste
What you do:
1. Sauté onion and garlic in olive oil over medium heat. Add chard.
2. Add the beans. Heat up until chard becomes soft but not mushy.
3. Salt and pepper to your taste.
My Italian mother and grandmother always made this and served it with a hearty bread. My grandfather called it "good peasant food"-meaning its cheap and super healthy!

SO HOW'D IT GO?
As a chard novice, this was my first chard recipe that I've ever tried making myself. I used did everything as specified and it turned out great. It's super easy and delicious!

I used half rainbow chard, half collard greens (my chard didn't amount to much after I tossed it in), added 2 tomatoes, some dried basil and red pepper flakes.
Had a decent amount of liquid for the bread, but my husband wanted more, so I'll probably add a little broth next time too.
Simple, healthy hearty dish. I used green chard, garbanzo beans(undrained) and generous shakes of seasoning salt. I also added about a tablespoon of a spicy Thai peanut sauce to give it a little kick. Pretty good dinner to put together when you're hungry but too tired to prepare more involved recipes.

;)b I die for this simple peasant food, lol.. and like someone else said earlier, I too pour all of the bean juice in because I like to soak it up with a nice loaf of bread.
I love super healthy dishes! I used chickpeas for my beans. I felt that this dish needed several good shakes of salt to make the flavors really come out.
I used herbed salt, added ground chilli and dried chilli flakes, so spicy and yum. Also cooked the stems before adding other stuff and used a some of the drained liquid. So quick and easy! This will serve well with rice.

I didn't know if I should use the red part/stems..but I decided to (since it is the majority of the plant). I sauteed the stems..and then added lots of onion, lots of s and p, some red pepper flakes, about 8-9 cloves of garlic, and the chard leaves. I used garbanzo beans, and drained most of the liquid off (I should have left it in though). I also added a little bit of veg stock at the end. It was good with lots of flavors..and the garbanzo beans were good in it as well. : )
