1/2 large onion, diced
garlic, minced, to taste
2 tablespoons olive oil
1 large bunch red (Swiss) chard, chopped
1 (15 ounce) can white or navy beans, drained
salt and pepper, to taste
1. Sauté onion and garlic in olive oil over medium heat. Add chard.
2. Add the beans. Heat up until chard becomes soft but not mushy.
3. Salt and pepper to your taste.
My Italian mother and grandmother always made this and served it with a hearty bread. My grandfather called it "good peasant food"-meaning its cheap and super healthy!
