Tortilla Soup

What you need: 

1 onion, chopped
2 cloves garlic, minced
1/4 teaspoon pepper
2 cups reduced sodium veggie broth
1 can (14 1/2 oz) stewed tomatoes
1 cup corn
1 can (4oz) chile peppers
1/4 cup fresh cilantro, chopped
1 cup tortillas chips(optional)
1 cup soy cheese (optional)

What you do: 

Saute onion, garlic, cumin and pepper.
Add broth, tomatoes, corn and chiles. Stir. bring to boil, then reduce to low and simmer for 8 minutes. Stir in cilantro.
Serve over the tortilla chips and garnish with the cheese.

SO HOW'D IT GO?

This was great!  I used "chili ready" diced tomatoes, omitted the cilantro, and added a bunch of chili powder.  I melted some FYH Nacho Cheeze into the soup instead of sprinkling it on top and topped it with crunched up tortilla chips.  Yum!

The soup was very good, especially the broth! It was nice and spicy. However, I would recommend using less onion. I didn't even use a whole onion and what I did put in the soup made it really thick. But that may just be a matter of preference!

I made this tonight for my dad and myself.
oh..my..god. It was soo good. He's a meat eater,and he LOVED it. Definitely going to make this again soon.
