Tofu Spinach Pesto
What you need:
(for Pasta and Pizza)
3/4 cup tofu, patted dry and crumbled
1/2 cup tofu cheese or any cheese substitute
1 tablespoon basil
1/2 teaspoon oregano
1/2 parsley
1/2 cup chopped spinach
1 clove minced garlic
1/4 cup soy milk
salt & pepper (optional)
What you do:
Combine all ingredients in a saucepan and cook over low heat for 6-9 minutes.

SO HOW'D IT GO?
This turned out pretty well, I used it for pizza (see picture) and added other toppings. It didn't exactly taste like pesto, but it was good. I just wish I had a food processor. I am vegan, one of my roommates is vegetarian and the other is a meat-eater, and they both seemed to like it. It didn't seem to be the right texture or flavour. Still worth a shot, but I am going to try other recipes.
