Tofu Piccata

What you need: 

4 to 6 ounces linguine pasta
10 ounces extra firm tofu
salt and pepper
3 tablespoons flour
2 tablespoons vegan butter, divided
1/4 cup white wine
juice of 1 lemon (about 2 tablespoons lemon juice)
2 tablespoons capers
4 tablespoons chopped flat-leaf parsley

What you do: 

1) Press the tofu between paper towels for 10 minutes to remove excess liquid. Cut into four 1/8" slices. Salt and pepper each side. Dredge in the flour.
2) Cook linguine according to directions.
3) Meanwhile, heat a pan to medium-high heat and add 1 tablespoon vegan butter. Add the tofu slices and cook for about 2 minutes on each side or until golden. Remove from the pan.
4) Deglaze the pan with the white wine. Squeeze in the lemon juice and add the capers, stirring to remove any cooked-on bits from the pan. Remove from the heat. Add half of the parsley and the remaining 1 tablespoon vegan butter, stirring until melted.
5) Top the linguine with the tofu and drizzle the sauce over. Sprinkle the remaining parsley over and around the plate. Enjoy!

I really love this.But the sauce seems to evaporate.Can you please tell me what I'm doing wrong?


OMG, I made this last night for dinner and was thinking about it for the rest of the night, lol.  It was so good  ;D


This was sooo good.  :)>>> I added thyme and a lil garlic powder to the flour, I did not have any wine so I used veg stock.  I also wilted some spinach. it was delicious. Thank you for sharing. 


I've never had the real piccata, but it couldn't be better than this!  I added some ground thyme to the flour mixture and it turned out to be a delicious lunch.  I served it over a bed of grilled zucchini ribbons for a little greenery.  I will make this again for sure.  Thank you.


This was so good!  I made garlic mashed potatoes and put the tofu over it. I used two boxes of tofu so next time I need to double the sauce recipe.  This is going to be a new regular in my meal rotation because it was simple to make and got rave reviews from my husband and kids.  Delicious!!! 


oh i also used broccoli instead of linguine which went nicely with it! I'll try the garlic next time like you said everydaymatters


man this was really really good! I used to loooooove chicken piccata before i went veg. I thought the sauce was a bit sour/vinegary but maybe that's cuz my jar of capers was filled with vinegar. (this was my first time buying/cooking capers so i wasn't sure what to expect) I spilled out the liquid and filled it with water, which is what i usually do with olives, and it gets the salty taste out.


SO GOOD.  Made this last night, and I'll make it again tonight. I added garlic. :)>>>


This was amazing.  Friends just made this and it was INCREDIBLE.
