Tasty Mexican Pinto Beans

What you need: 

2 cups pinto beans
3 dried ancho peppers
1/2 cup fresh cilantro
1 medium onion
2 cloves garlic
cummin
tiny dash of cinnamon
jalapeno or habanero pepper (optional)

What you do: 

Soak the beans for 6 hours.
Chop and saute the onion and garlic in a large pot.
Drain the beans and put in the pot, covering with water.
Add the dried peppers, whole (take out stems later).
Cook partially uncovered for 1 1/2 hours, until beans are very soft.
Let most of the water cook off, consistency should be thick.
Towards the end of cooking, add cilantro, some cumin, and a tiny (1/4 tsp) dash of cinnamon. If you like heat, add a hot pepper at the beginning of the process.
Serve with tomatilla salsa and corn tortillas for a cheap and tasty lunch.

If you have a problem with the soup not thickening, add a little corn starch and stir...add more or less as you want your soupt to be...

I just prepared a pot of beans that kick butt!

Wash pinto beans and then soak for about 2-3 hours then drain and add fresh water(filtered water works great).

Cook for about 1/2 hour under medium heat, then add sliced onion, sliced or chopped garlic (depending on how much you like garlic), add some jalapeno bacon for flavor and salt and cook for about 1/2 hour more.

At this point I add sea salt and sliced jalapeno pepper, hamburger, venison or sausage and cilantro and cook to desired thickness of soup, and let cook for 30-45 minutes longer.

 

Beans take less time to cook when you soak but you want to make sure the flavor from the ingredients cook well into the bean and the soup...Mmmmmmmmmmm

I don't know about you, but sometimes I just crave a big bowl of delicious beans.  This totally hit the spot!  I had to cook my beans longer than 1 1/2 hours and I even soaked them longer than 6 hours.  Very tasty.  I will make again. Thank you!

So simple and sooo good. The only things I added were some oregano and a lil sea salt. This beats my pinto bean recipe hands down. Thanks!
