Tasty Eggplant Bake

What you need: 

3/4 cup uncooked quinoa
1 1/2 cups vegetable broth
3-4 cloves garlic, minced, divided
1 large eggplant, sliced and peeled (salted, if desired)
olive oil, as needed
balsamic vinegar, to taste
1 large green pepper, sliced
1 large red pepper, sliced
1 medium zucchini, sliced
1 onion, sliced
vegan parmesan cheese, to taste
1 (6 ounce) can tomato sauce with herbs

What you do: 

1. Preheat oven to 475 degrees F. Prepare quinoa. Bring broth and 1 garlic clove to a boil, add quinoa, and simmer for about 15 minutes. Take off heat and let sit.
2. Sprinkle eggplant with olive oil and balsamic vinegar. Set aside. Layer the veggies by type, alternating with quinoa and vegan parmesan.
3. Pour tomato sauce on top. Sprinkle with vegan parmesan and bake for about 40 minutes.
Serve with fresh vegan bread.

SO HOW'D IT GO?

I just made this for lunch, minus the zucchini. We didn't have any. All 3 of my boys loved it, even my husband. I will def be making this again. Thanks for posting.

Made this a few times and everyone loves it. I was low on quinoa so I mixed it with wild rice, it still came out perfect.

this was great! added some sun dried tomatoes and more garlic to the top with the tomato sauce. didnt use any cheese tho! very filling and delicious! me and my 2 omni friends ate the entire dish for dinner  :> nom nom nom  thanks for the recipe!, im gonna make this a regular and experiment with mushrooms and other suchhh

Grilled the veggies first added some mushroome. Here is a photo before the sauce (and meat which was in the sauce).

Tried this as my first Vegan dinner recipe and it was really great! This was also my first experience with eggplant and quinoa.  I was pleasantly surprised and my non-vegan family even liked it.  I did put veggie mozzerella on top with the parmesean. Thanks so much!

This one didn't work out great for me I'm afraid...
I grilled the vegetables (simply because I love the flavour of grilled and roasted vegetables) before putting them into the dish, and I loved the combination of the veggies, quinoa and cheese, but the pasta sauce on top just didn't seem to work so well with the rest for me. I had the leftovers for lunch today, and scraped off the pasta sauce layer, without which I really enjoyed the other ingredients - so it *has* left me with a combination of ingredients I will definitely have again, for which I thank you :)

Can anyone tell me if you layer each vege then quinoa and cheese between each or do you mix the quinoa with the veges and layer each?

Amazing!!!!! For the veggies I only had eggplant and mushrooms.  I added mozarella cheese instead of parm, sprinkled nutritional yeast in the layers and topped with bread crumbs.. this was delicious and super simple!!!
