Take My Breath Away Burgers

What you need: 

2 cups uncooked blackeyed peas (or 4 cups cooked beans of choice)
1 onion, diced
4 large garlic cloves, grated
1 fresh jalapeno, seeded and chopped or 3 tablespoons pickled jalapeño
2 carrots, grated
1 1/2 cups corn
1 tablespoon Bragg's or tamari/soy sauce
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon pepper
2 tablespoons hot mustard (or regular)
2 tablespoons pureed chipotle peppers
1 cup oats
1/4 cup toasted wheat germ
1/4 cup flour, if needed

What you do: 

1. Soak beans overnight or use quick soak method and then cook according to package directions. Mash up in a large bowl.
2. Sauté onion, jalapeno, garlic, corn, and carrot in a little oil or the Braggs. Add sauté mixture to mashed beans and stir in spices, mustard, and chipotle puree (I like to add a few dashes of habanero hot sauce, but somehow I don't think everyone shares my love for extremely spicy food).
3. Mix in oats and wheat germ. May need flour if it cannot be formed into patties.
4. Form into patties, grill on grill machine or roll in flour and grill in a frying pan. Freeze leftovers.
Marvelous topping suggestions: Avocado, red onion, tomato, spinach, and vegan nayo mixed with some chipotle/chili sauce.

SO HOW'D IT GO?

I made these as an appetizer by rolling it in 1" balls and in breadcrumbs then deep frying them. I served it with a spicy blend of fake mayo, lime, capers, mustard and hot sauce. They were a big hit! I used ground flax seed since I didn't have wheat germ.

is there a substitute for 1/4 cup toasted wheat germ? i can not do wheat.

Amazing.  Just got done making and eating these burgers.  I was honestly shocked as I have not found a good recipe for veggie burgers I liked until now.  THANK YOU!

these are AMAZING! i halved the recipe and used 1 c. bread crumbs (from 1 whole wheat pita) instead of the oats, wheat germ, and flour and they were perfect!! held together beautifully, i was impressed. i didn't put all the spices in, but i did add a few dashes of green tabasco sauce. i made them for my parents and they said these were the only burgers they were going to eat for the rest of the summer! no more beef! yessssssssss. made 6 nice sized burgers, i'd say these were a success  ;)b

These are probably the best veggie burgers I've ever made! Much easier to handle than some others >_> And they are delicious! My boyfriend (who eats meat) said he'd eat them even if they weren't cooked. We used a can of black beans, added maybe a tablespoon of nutritional yeast for extra goodness, and a squirt of lime (it just seemed to go with the spices). We did have to use quite a bit of flour, but it's worth it. We fried the crap out of them and put them in the oven at 350 for five minutes. We did cut the recipe in half but it made 9 smallish patties. These are totally going to be made regularly!

Wonderful recipe! Best bean-burgers I've made so far! Even my picky-eater teenage son loved them. I had to modify a bit based on pantry stocks: pintos for black-eyed peas, chipotle powder for puree, black bean/ corn salsa for corn. I also whizzed the oats in the blender to grind them, and used flax meal instead of wheat germ, & the patties stayed together very well. I did have to add a handful of flour, and then I lightly floured both sides of the patties before cooking. I fried the heck out of 'em in coconut oil (indulgence! may try baking next time, but mmmm!), and they ended up with a nice sort of crispy outside & softer middle... VERY good! Will def'ly make again!

These were good... I used quick oats and they held together fine... I also halved the recipe and still got 8 burgers! I also didn't have wheat germ so i just substituted extra quick oats... These were a bit spicy but that's okay with me :)
