Sweet and Sour Pineapple Tofu

What you need: 

2 cloves garlic, minced
1" piece fresh ginger, minced
2/3 cup pineapple juice
2 to 3 tablespoons rice or cider vinegar
2 tablespoons maple syrup or other sweetener
hot sauce, to taste
1/4 cup soy sauce
corn starch, as needed
8 ounces firm tofu, cubed
oil, as needed
1 handful fresh or canned pineapple chunks

What you do: 

1. In a small pot, mix garlic and ginger. Add pineapple juice, vinegar, maple syrup, hot sauce, and soy sauce.
2. Bring to a boil, then lower heat and let simmer while you prepare the rest. If the sauce is not thick enough, add a spoonful cornstarch.
3. Toss tofu cubes with corn starch. You can deep fry them in canola oil or bake them in the oven for a healthier dinner. The fried version is more "authentic" or just more indulgent.
4. Combine tofu with sauce, and add pineapple chunks. Enjoy! You can prepare some rice and some veggies to serve along. Dark greens and red bell peppers are my favorite!
Source of recipe: I came up with this recipe a couple of months ago, when I had a craving for Chinese take-out. but feared the sodium/sugar/fat...

SO HOW'D IT GO?

I followed recipe with slight variation -- used agave to sweeten, sriracha for the spicy, and added a couple of whole cloves for a richer flavor, cooked vegetables with the tofu instead of separately  ... Very yummy!

I just made this tonight. I added too much hot sauce for my own goof, but this was tasty! I added broccoli and served it over basmati rice.

I used some vegan "abalone" instead of tofu and added carrots, broccoli, red pepper, and onions. This is was delicious! It was like eating at a Chinese restaurant. A sprinkle of red pepper flakes and cashews on top really sealed the deal.

What is abalone?

a type of fish... never ate it though :)

Abalone is actually a mollusk. They have beautiful iridescent shells.

I am eating this right now! I used a whole can of pineapple chunks (in juice) and added peppers and onions and some more corn starch. It is sooooo good!  :)>>>
