2 cloves garlic, minced
1" piece fresh ginger, minced
2/3 cup pineapple juice
2 to 3 tablespoons rice or cider vinegar
2 tablespoons maple syrup or other sweetener
hot sauce, to taste
1/4 cup soy sauce
corn starch, as needed
8 ounces firm tofu, cubed
oil, as needed
1 handful fresh or canned pineapple chunks
1. In a small pot, mix garlic and ginger. Add pineapple juice, vinegar, maple syrup, hot sauce, and soy sauce.
2. Bring to a boil, then lower heat and let simmer while you prepare the rest. If the sauce is not thick enough, add a spoonful cornstarch.
3. Toss tofu cubes with corn starch. You can deep fry them in canola oil or bake them in the oven for a healthier dinner. The fried version is more "authentic" or just more indulgent.
4. Combine tofu with sauce, and add pineapple chunks. Enjoy! You can prepare some rice and some veggies to serve along. Dark greens and red bell peppers are my favorite!
