Spritz

What you need: 

1 cup non-hydrogenated shortening (like Spectrum)
3/4 cup sugar
Ener-G egg substitute equal to 1 egg
1 teaspoon vanilla
1 teaspoon almond extract (optional)
2 1/4 cups flour
1/2 teaspoon salt
1/4 teaspoon baking powder
food coloring (optional)
vegan sprinkles or colored sugar (optional)

What you do: 

Mix together all ingredients thoroughly.
Pack dough into a cookie press or place flattened teaspoonfuls on an UN-greased cookie sheet.
Bake at 375 F for 8-10 minutes.
The dough should not be very stiff or it will not work in a cookie press. If it is too stiff, add about 1/8-1/4 cup soymilk.
Do not wait for the cookies to become brown- they are done before you think they are. This should result in tender, melt-in-your-mouth cookies. YUM!!

SO HOW'D IT GO?

These are outstanding. I ended up baking them for 12 minutes, and then dunking them in melted chocolate with a bit of almond extract after they had cooled. Crispy and melt-in-your-mouth on the outside,  soft and moist in the middle. And covered in chocolate. Amazing. Three people at work asked for the recipe.

These were delicious  ;D. I added a bit of almond butter along with the fattening component (in my case, a combination of margarine and shortening), as well as the equivalent of two eggs instead of one.
