Spinach Tofu Dip

What you need: 

2 scallions, coarsely chopped
1 clove garlic, peeled
10 ounce package frozen chopped spinach, thawed and squeezed dry
1/2 teaspoon cayenne
1/4 pound silken tofu
2 tablespoons lemon juice
1 tablespoon soy sauce
Splash sesame oil (optional)

What you do: 

Combine all ingredients in blender and process until smooth. Transfer to bowl and serve with raw vegetables.
Could it be much easier? Really good, with just enough spice. We dipped whole wheat pita triangles, too. Yum!

SO HOW'D IT GO?

very good dip.  I didnt have scallions so i used 2-3 handfuls of chopped chives.  I also didnt have soy sauce so i used 2 teaspoons of bragg liquid aminos.  I thought it needed more of the 'cream' consistency so i added more tofu.  tasty and easy way to eat your greens

I made this for a gathering and people ate it up! I also used it as a spread on sandwiches and it worked well for that as well.
