Speedy Garlic Sauce for Pasta

What you need: 

2 tablespoons olive oil
1 clove garlic, minced finely
1/2 teaspoon parsley
1/4 teaspoon red pepper flake
salt and pepper, to taste
1/4 cup reserved pasta water
vegan parmesan, to taste

What you do: 

1. Heat oil in a shallow sauté pan, add remaining ingredients excluding water, and sauté on low until the garlic is tender but not browned.
2. Prepare the pasta according to package directions, and add to the pan with reserved liquid, salt and pepper.
3. Toss over medium heat until thickened. Sprinkle with vegan parmesan, if desired.
This recipe can be increased by the number of people eating. I make this when there's nothing else in the house, its quick simple and delish! My boyfriend begs me to make it every time he visits! Great for unexpected dinner guests.'

Really good! Super easy and quick!  I added lots more parsley. Also threw in some chives and chopped asparagus and topped it all off with a squeeze of lemon. Loved the red pepper flakes! Thanks!

Wow this is great! As a college student, I'm at the point where peanut butter sandwiches are the main staple in my diet,  but this recipe is going to work into rotation for sure! It's quick, cheap, and tasty, and even better when you toss in some steamed broccoli!

Oh and I forgot to say that I used bowtie pasta instead of 'sghetti cos its much much prettier  :)

This was soooooooo awesome!!!  I was craving pasta and garlic as usual and then I found this recipe.....YUM!!!  I made a few variations and posted a pic of the end result.  I used about half a jar of minced garlic (I LOVE GARLIC!!), 2 Tbs of rice bran oil, a small tin of these yummy 'accidentally vegan' mushrooms from the supermarket, 2 Tbs of soy margarine and 2 Tbs of vegan parmesan.  I mixed it all up and cooked it on medium heat and then added the pasta and 1/4 cup water from the pasta and let it all thicken.  It was so delicious!!!  I made heaps so I can have it for lunch and dinner tomorrow, that's how good it was!!!  Thank you for the fab recipe!  :)>>>

Wow, this is sooo easy and so good.  I can't believe it only has 3 stars.  I used coconut oil, 3 cloves of garlic, and some italian spice, in addition to the spices in the recipe.  I think I slipped on the red pepper since my throat and tongue are on fire, but it's too good to stop eating.  I added some broccoli at the end of cooking, and I also used sundried tomato spaghetti for a different taste.  Really good.  Def a keeper!
