Spanish Spinach and Chickpeas

What you need: 

1 bunch fresh spinach, cleaned and chopped small
2 cups cooked chickpeas
2 cloves garlic (to taste), crushed
2 tablespoons sweet paprika
1 tablespoon ground cumin
1 tablespoon vinegar (optional)
2 tablespoons olive oil

What you do: 

Place chopped fresh spinach in a heated pot, and cover until spinach collapses and is about half-cooked.
Mix paprika and cumin together.
Heat oil in a large skillet. When hot, toss in spices and REMOVE FROM HEAT. When the spices are fragrant (it takes just seconds), toss in the spinach and mix well. Add chickpeas and check for salt. Heat through.
Some people like to drizzle vinegar on this, I like it plain.
Paprika comes in two kinds: spicy and sweet. Don't do what I did and grab the wrong jar!

SO HOW'D IT GO?

I love this stuff!  I make it with finely chopped black kale instead of spinach and add chili powder and a big splash of red wine vinegar.  Delicious.

I actually went out for tapas last night and had a varation of this dish!  It was delicious, I am excited to have the recipe so I can make it at home.

I've been making a v similar dish to this for the past four years or so since I went to my sister's local tapas bar.  Paprika must have been a secret ingredient as it worked well and lifted my usual version.  Thanks for posting.

I made a mini tapas dinner last night with this dish, a lentil and red pepper dish, a paella and a cheat's potatas bravas (using ready made hot salsa).  So good.
