Spaghetti and Falafel Balls

What you need: 

1/2 lb. spaghetti or favorite shape pasta (preferably whole wheat)
20 vegan falafel balls, frozen or home-made
1 onion diced fine (or use frozen)
2 garlic cloves, minced
1 jar vegan vodka sauce or favorite marinara-type
vegan parmesan cheese (optional)

What you do: 

Cook pasta according to package directions. While its cooking, saute onions and garlic in a bit of olive oil in a saucepan till starting to brown (save a step by eliminating garlic and using garlic-flavored olive oil!). Pour in sauce, add vegan cheese if desired, bring to a slow boil. Add falafel balls and cook on low for a few minutes. Dont worry if the balls disintegrate, it just adds texture to the sauce which will be very thick. When pasta is done, drain and spoon sauce over it, sprinkle more vegan cheese.
This was created by my always-hungry teenage son in a moment of hungry desperation!
