Soy Sausage and Broccoli Baked Ziti

What you need: 

1 (16 ounce) box ziti
2 heads broccoli, chopped
1 (20 ounce) jar tomato pasta sauce
1 (14 ounce) tube vegan sausage (I use Gimme Lean sausage style), formed into small balls
8 ounces vegan mozzarella style vegan cheese, shredded

What you do: 

1. Preheat oven to 350 degrees F. Cook ziti according to directions on package and drain. Meanwhile, steam broccoli until desired softness.
2. Combine ziti with pasta sauce, broccoli, and sausage balls in large rectangular dish. Top with vegancheese.
3. Bake for about 20-30 minutes, or until heated through and cheese is melted.

SO HOW'D IT GO?

this was awesome. i made it a day in advance, halved the recipe (but kept the sauce at 20 oz...we like it saucy  ;) ) used the sausage crumbles from this site, and subbed mushrooms for the broccoli since i didn't have any. hubby is omni so he had mozz on his half, but my half was plain without soy cheese since i can't buy it here, and it was still amazing!!! even hubby said he wouldn't have missed the cheese, so next time i might skip it all together. i like a dish that can stand on its own feet, hehe. definitely a keeper, and i can see making this for a potluck/family gatherings. thanks for the recipe!  ::)

oh - and for a half recipe, i used a rectangular 2.5 qt casserole, and it wasn't entirely full (probably would have been just right had i used broccoli.) hope that helps, jaseyrae!

wat size baking dish should i use?

Absolutely wonderful! I did it twice.  The first time, I followed the recipe verbatim.  The second time, as I wanted to have a meal to take with me to work, I did everything except top with cheese add sausage and bake.  I used two full broccoli crowns and portioned out the mixture (less cheese and sausage) into 6 portions and then topped those with the shredded cheese and sauteed sausage balls so that when I microwaved it at work, the cheese melted on top.  Wonderful!  Thank you so much for sharing.  I am new to vegweb and intend on sharing  many of my own recipes.

This was extra nummers :)  I used a tube of soyrizo instead of gimme lean, and summer squash instead of broccoli (that's what happened to be in my fridge), and and tossed in some jarred hot peppers with everything. Very tasty with plenty of leftovers.

Well, the cheese didn't melt, of course, so I added some Chreese and YUUUUM <333 tons of leftovers, too, I ate it for like a week. But no complaints here  :)>>>

this was very very good, along with being easy and not too work-intensive. I used the "sausage crumbles" recipe from this site (http://vegweb.com/index.php?topic=7656.0) instead of the gimme lean, and I added a few handfuls of spinach.  I used FYH cheddar cheese; I mixed half of it in with the pasta/veggies and sprinkled the other half on top.  I was surprised at how "non-vegan" it tasted, and even my meat loving roommate approved of it.  I'll definitely make it again!
