Southwest Cobb Salad
What you need:
1 heart romaine lettuce, torn to small pieces
1/2 cup black beans
1/2 cup corn
1 fresh tomato, diced
1/2 avocado
white vegan cheese, grated
salad dressing (I use champagne vinaigrette)
What you do:
Put all ingredients on top of torn romaine.
I usually eat it with some toasted pita or wheat bread!
Enjoy!
Source of recipe: I had an amazing salad at a restaurant, and I modified it to work with what I had on hand.
