Sour Cream Coffee Cake
Pastry Ingredients (use vegan versions):
1 stick margarine, softened
1 cup sugar or equivalent
1/4 cup unsweetened applesauce
2 cups sifted plain flour (unbleached preferred)
1 tablespoon sugar
1 teaspoon Baking soda
1 teaspoon Vanilla
1 cup vegan sour cream
1 stick vegan margarine, softened 1 cup vegan sugar or equivalent 1/4 cup unsweetened applesauce 2 cups sifted plain flour (unbleached preferred) 1 Tbsp powdered vegan sugar 1 tsp. Baking soda 1 tsp. Vanilla 1 cup vegan sour cream
Preheat oven to 350 degrees.
Cream margarine, vegan sugars and applesauce in a large bowl. Mix in separate bowl flour and baking soda. Alternately add dry ingredients and sour cream to creamed mixture, mixing on low between each addition. Add vanilla. Spread in a greased jellyroll pan (15 x 10 x 1).
Topping: 1 cup flour (whole wheat is best) ½ cup vegan sugar 1 stick non-hydrogenated vegan margarine
Combine all 3 ingredients. Chop into a fine meal. Sprinkle topping evenly over pastry. Bake for 20 minutes. Allow to cool for 5 - 10 minutes.
Glaze: 1 cup powdered vegan sugar 1 tablespoon (or more) water
Stir vegan sugar with water until pourable. Drizzle glaze over pastry. Serve at once. Tastes great with coffee!

Seriously, the term "coffee cake" doesn't imply that coffee is an ingredient. (I assume) it means that you eat it with cookies. (like tea biscuits or tea sandwiches).

This is the absolute most incredibly delicious cake ever!!! I didn't have sour cream, so I used Toffutti Cream Cheese. I have made this cake 3 times so far, and served it to vegans and carnivores alike. Everyone loves it and asks for the recipe. I also used baking powder instead of baking soda. Use the measures in the recipe, but try substituting vegan cream cheese instead of sour cream. The batter will seem very thick with cream cheese, just go with it... you will not be disappointed!
I just made this today and it turned out GREAT!!! I will say that I added diced walmuts and pears on the top and I added the lemon to the glaze like fakeveganannette did, which turned out to be a very good addition! ;) I haven't had a coffee cake since I became vegan and this is a delight.
Pretty delicious overall, I must say. The one disappointing aspect of it was the topping, which could have been sweeter, I think, although the glaze is plenty sweet on its own. Just to kick it up, I added some lemon zest to the glaze also. A perfectly yummy coffee cake that pleased a largely non-vegan crowd.
