Soft Graham Cookies

What you need: 

2 cups all purpose flour
1 cup packed brown sugar
1/2 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegan margarine
1/2 cup soy milk
1/4 cup agave nectar
1 tablespoons vanilla

What you do: 

In a large bowl, combine all dry ingredients. Using a fork, mash the margarine into the dry ingredients until the mixture looks like small crumbs. In a separate bowl, whisk together the remaining ingredients. Pour mixture into dry ingredients, and stir just until all ingredients are moistened. Chill mixture for 1 hour. After it has chilled, use your hands to form the dough into flattened circles on a cookie sheet. The mixture will be very sticky, but just try your best. Bake the cookies at 350 degrees. They cook quickly, between 5 to 10 minutes.
