Sloppy Joes

What you need: 

2 tablespoon olive oil
1 small - medium onion, chopped
1 medium green pepper, chopped
2 cloves garlic, minced
1 pkg. tofu (lite tofu works too)
2 tablespoon soy sauce
2 cups tomato sauce, any variety
1 tablespoon chili powder
1/2 teaspoon cumin powder

What you do: 

1) Saute 1st 4 ingredients (oil, onion, pepper, garlic) until tender.
2) Add tofu and soy sauce to pan. Cook until tofu starts to brown slightly.
3) Add the tomato sauce, chili powder, and cumin powder. Stir and let cook for a minute or two.
4) Serve hot on toasted burger buns, rolls, or bagels.

SO HOW'D IT GO?

I didn't think these tasted much like the sloppy joes I remembered as a kid but they were good in their own way.  I had to let them cook down after adding the tomato sauce for like 6 minutes, though, they were very watery after only 2 minutes.  I might try adding less sauce next time, and possibly use tempeh instead of tofu?

This recipe is FABU! We have only recently become vegan and still in the testing phase to find new foods we like. This is #1 on our list now! Even my carnivore DH ate two!

I did make a few changes, I used coconut oil instead of veg oil, omitted the onion, and added 1/4 tsp cinnamon and 1/2 tsp cocoa powder. *yum yum*

Excellent recipe. I tried it using textured soy crumbles and it was delicious. Thank you for sharing it!
