Simple Tofu Tacos
2 tablespoons oil, divided
1 pound extra firm tofu, drained
1/2 onion, chopped (about 1 cup)
1/2 bell pepper, chopped (about 1 cup)
1 cup kale, chopped
1 (1 1/4 ounce) packet taco seasoning
10 corn tortillas
lettuce, shredded, to serve
cabbage, shredded, to serve
salsa, to serve
vegan sour cream, to serve (I use Tofutti)
tomatoes, diced, to serve
1. Heat 1 tablespoon of oil in a hot wok or other large nonstick pan. Crumble tofu into the pan. Fry the tofu until it begins to turn golden, stirring occasionally.
2. Once tofu begins to turn golden, add the bell peppers, onions, and remaining oil (if you need it). Continue to cook until bell peppers and onions are soft, stirring occasionally.
3. Add kale and taco seasoning (no need to add water), mix until all the tofu and veggies are evenly coated and kale is wilted. Take off heat.
4. Heat tortillas, add taco filling and toppings. Enjoy!

Made these just now! I added corn, sour cream and cheese to mine (I'm vegetarian not vegan), it was my first time cooking tofu. All in all pretty good. I can't wait to use it more and perfect it to my liking.
1 packet of taco seasoning is 2 T
the taco toppings can be whatever you desire
the kale is optional... i think the onions and bells should stay for sure

This is great! I decided at the last minute to venture from my usual black bean taco filling, and I'm so glad I did. This was easy and delicious. I made them exactly according to recipe, minus the cabbage, the only thing I didn't have on hand. It stuck a little right at the end, so I think I might add just a splash of water with the seasoning and kale next time. I'll definitely make this again, thanks a lot! :)

me and my mom loved these. my bf didn't like them, but only because i added a serrano chile and he said i shouldn't have made it spicy. overall though, a good recipe. i will definately make them again.
