Simple Navy Bean Soup

What you need: 

1/2 lb. dry navy beans
1 celery stalk, chopped
1 carrot, chopped
1 medium onion, diced
1 tablespoon olive oil
2 tablespoons salt
1 tablespoon pepper
2 cubes vegetable stock
8 cups water
1-2 drops of liquid smoke

What you do: 

1. Saute celery, carrot and onion in olive oil until onions are translucent.
2. Rinse Navy Beans.
3. Add navy beans and all other ingredients to pot. Bring to boil.
4. Reduce heat and simmer for 45 min to and hour or until beans are tender.
5. Feel free to add other spices or vegetables.
Great with biscuits!

SO HOW'D IT GO?

I think the salt content on this recipe might be incorrect. Did you mean 1 tablespoon or 1 teaspoon of salt?

It really doesnt matter.  My husband is a salt freak, so we usually use tablespoons.  If I cook it for myself, I use teaspoons

This was a good soup. Next time I'm going to double the vegetables and halve the beans.
