Simple, But Decadent Apple Cobbler

What you need: 

1 cup all-purpose flour
1 cup brown sugar
1 1/2 cups old-fashioned oats
1/2-3/4 cup vegan butter, melted (I use Smart Balance light)
3-5 granny smith apples, peeled, cored, and sliced thinly

What you do: 

1. Preheat oven to 350 degrees F. Mix flour, sugar, and oats in medium/large bowl. Mix melted margarine with the oat mixture.
2. Put apples in a casserole dish that holds them nicely. Spread the oat mixture evenly over the apples.
3. Bake for 1 hour.

SO HOW'D IT GO?

This was really yummy! I added 1/2 of a pureed apple to the topping mix along with some cinnamon and vanilla--turned out great! Yum!

i divide this recipe up and make myself a mini apple cobbler some nights and cook it in a mini casserole dish in the toaster oven...im a huge fan of any kind of cobbler

this is such a quick and delicious desert.
i added some cinnamon on top of the apples before i put the oatmeal mixture on, just to give an added bite. :)

oh yeah, its also VERY good if you use self-rising flour. because it makes the topping very cookie like!

This was very good...it didnt take long at all, and the vegan whipped cream tops it off!!!

oh and don't forget to top with vegan ice cream or whipped topping!!!
