Scuffins! A Mix of Scones and Muffins

What you need: 

2 cups whole wheat flour
1/2 teaspoon salt
1/4 cup applesauce or oil
3 teaspoon baking powder
1 cup nondairy milk
1 teaspoon vanilla
1 tablespoon date sugar
1 small granny smith apple
Handful or two of raisins
Chopped walnuts or nut of choice

What you do: 

1. Preheat oven to 350 degrees Fahrenheit.
2. Mix the dry ingredients in a bowl. Add in the applesauce, non-dairy milk and/or water, and vanilla. Then add in chopped apple, walnuts, and raisins. The consistency of the dough may seem rather sticky, but don't get discouraged--cover your hands with some flour and shape the dough into a ball.
3. Sprinkle and spread some flour on a dry surface and add dough. Flatten the dough to 10 to 12" lengths until the height is no taller than an inch thick. Tear from rectangle of dough and form balls (between the size of a golf ball and baseball), then place in muffin circles of a muffin pan. Making the balls about that size should give you about 12 (or a little more) scuffins. Once the scuffin balls are in place, push them into the circles to ensure that the bottom will be flat like a muffin!
4. I like to sprinkle these little babies with cinnamon before I plop them into the oven to bake for 20 minutes. You can also stir some cinnamon into the batter, it's really tasty.
Feel free to be creative and exchange the fruits and nuts for other fruits and nuts... or maybe use some carob chips instead of raisins... mmm.
Source of recipe: I found a basic scone recipe then used what I had in the kitchen until something tasted good. I've changed the ingredients and amounts a bit, and voila... scuffins!
