Bubble Bread

What you need: 

1 cup pecans, chopped
1 package frozen yeast rolls or bread loaf (or use your own homemade)
1 3-oz. package dry instant butterscotch pudding mix
1/2 cup brown sugar
1/2 cup melted soy margarine
1 teaspoon cinnamon
(check ingredients of rolls and pudding mix for dairy)

What you do: 

Grease bundt pan or tube pan well.
Spread 1/2 cup chopped pecans in bottom of pan. Add roll or vegan bread dough cut in golf ball size pieces.
Sprinkle dry pudding mix over dough.
Mix brown vegan sugar, melted margarine and cinnamon together and sprinkle over dry pudding mix. Spread the remaining 1/2 cup pecans over top of everything.
Put this together in the evening and place in cold oven over night. In the morning, turn oven to 350 degrees and bake about 25-30 minutes.
Turn out onto plate immediately and enjoy.
This is really good for special occasions such as Christmas or Easter, etc.
When I made this recipe I used a whole wheat raisin vegan bread dough that I had made myself. I also cut the margarine down to 1/4 cup. It turned out just great. I wouldn't recommend this for everyday eating but it is soooo good for special holiday celebrations. Some people serve it for breakfast, but I think its so sweet that it is good for dessert!
