Scrumptiously Simple Chocolate Pudding

What you need: 

I package of silken tofu (brand of your choice - I like the low fat kind)
3 tablespoons of cocoa powder (or carob if you wish)
2 tablespoons of liquid sweetener of choice (maple syrup is really yummy!)
1/4 teaspoon of coconut or vanilla extract (optional)

What you do: 

Put all ingredients in a food processor or blender and puree until smooth - then pour into a bowl and devour with glee!

This is great!  I substituted carob for the chocolate and had a 1# package of silken tofu so added extra sweetener (a squirt of agave & 2 pack of Spenda).  I let the flavors meld overnight and it was very good.  Kinda strong on the carob flavor with 3 T but as we ate it DH & I really liked it.


:-\ Way too much cocoa powder... I wish I had a banana to add to that to cut to cocoa taste, but I don't ah. I couldn't even eat it, and I added less cocoa than the recipe called for anyway...
