The Sandwich That Got My Brother to Eat Tomatoes!
2 thick slices whole wheat bread
vegan cream cheese (I like Tofutti), to taste
1 good summer tomato, sliced thinly
red onion, to taste, sliced thinly
black pepper, to taste
healthy sprinkle oregano
healthy sprinkle chives
vegan margarine (I like Earth Balance)
garlic and herb blend spice (mine is McCormick salt-free)
1. Spread one side of each slice of the bread with a thin layer of cream cheese. Layer the thinly sliced tomatoes and onion over one side, pausing often to sprinkle with black pepper, and oregano.
2. Sprinkle the other cream-cheesed side of the bread with chives. Lots of chives. Close sandwich and spread outside sides of bread with vegan margarine.
3. Sprinkle with garlic herb seasoning in manner of garlic bread. Grill like a grilled cheese sandwich.
I made this for my 12-year-old brother, who insists that tomatoes (well, most vegetables actually) are unfit for human consumption, and he devoured it. He said it tasted better with "all those secret spices."

I just made this for lunch and oh my gosh, this is good! I think next time I will try to slice the onions a little thinner but otherwise it was so tasty. I did not have any oregano so I used basil. I can't wait to make it again. Such a wonderful alternative to plain old grilled cheese!
This was one of the best sandwiches I've ever eaten, ever. It was so easy and fast, and I never would've thought to put those ingredients together. I was really surprised at how tasty it was. The "secret spices" make it so good and the tofutti goes just right with it. I didn't have chives-- I used parsley, basil, onion powder, garlic powder, garlic salt, and regular salt & pepper. Thanks for the recipe, I forsee much of this sandwich in my future.
I just knew I had to try this when I saw such a cute, creative recipe name; it's very simple and tasty! I really liked the flavor of this sandwich. I used whole wheat French bread, and I recommend using a substantial, crusty bread like this. I didn't have chives, so I subbed thinly sliced green onions. I also sprinkled a little salt on the tomatoes and red onions, in addition to the black pepper and oregano. Seasoning the outside of the bread with Earth Balance margarine and garlic/herb blend (I used Mrs. Dash salt-free garlic & herb seasoning blend.) gave the sandwich great flavor. Next time, I'm going to try adding some other veggies like sliced mushrooms and fresh spinach. Mmmm...can hardly wait to make another!
I've got a ton of tomatoes right now, so thank you for this recipe! I just had this sandwich for dinner, YUM. used hummus instead of cream cheese (ick) and dried basil, not chives (didn't have chives). I also added a bunch of garlic powder and a little garlic salt. will use fresh basil next time and maybe saute the onion a little to take the edge off.
this was soooo tasty. the second time I made it, I didn't have any hummus and I mashed up white beans with a little olive oil and a bunch of those spices, plus a splash of plain soymilk, to make a spread. that was a quick, cheap substitute and didn't taste half bad.
