Rice Crispy Treats with Ricemellow Cream!
3 tablespoons vegan butter
1 teaspoon arrowroot powder + very small amount cold water
1 (10 ounce) tub ricemellow cream
1 teaspoon vanilla extract
agave syrup, to taste
5-6 cups crisped rice cereal
1. Line pan with parchment paper greased with vegan butter. In a large pot melt the butter over medium/ medium-high heat. Once the butter is melted, add the arrowroot powder mixture and blend (I used a whisk). I cooked it for about another minute.
2. Add the whole jar of ricemellow cream. Stir continuously and blend completely. Simmer for a couple of minutes. Add vanilla and agave syrup. Mix well.
3. Add cereal. I would suggest adding a little at a time. Heat and stir for a couple of minutes. Don't let it burn! Spread on prepared pan. Let cool. Cut into squares.
Eat tons of it and enjoy! I just made this last night. It was my first attempt. If anyone has any pointers to make it even yummier please feel free to leave comments. We've already eaten the whole pan and it has only been twelve hours!
Source of recipe: I modified the traditional recipe for marshmallow cream rice krispie treats.
SO HOW'D IT GO?
Thanks for posting! I use a slightly simpler recipe/method:
1 generous cup Suzanne's Rice Mellow
1.5 tsp vegan margarine
3 cups GF rice crispy cereal
Put the mellow and margarine in microwave safe bowl and heat until mellow fluffs and rises about 3x its original size (about a minute in my 1100 watt microwave) remove from microwave and throw in the cereal and stir with very large spoon. Spoon out into small bread pan. Let it cool. Total prep time less than 5 minutes. Let cool about 15 minutes so that treats hold together well.
These are great. I used cornstarch instead of arrowroot. And......the closest 2 grocery stores (didn't want to drive far off for a box of cereal) did not have the Erewohn brown rice cereal so I told my husband to pick up a box of Koala Crisp. YUM. They turned out very nicely.
These are delicious! First time I've had rice crispie treats in over 5 years! Yum!
These are great! I'm bringing these to a vegan potluck tonight. Soo easy! I subbed cornstarch for arrowroot, added about a tablespoon of agave, and added 2 teaspoons of amaretto liquor. I used 5 cups of cereal, but I think next time I'll use 5 1/2 so they are a little less sticky.
Thanks!!

Where can I get rice mellow????
you can find it at some HFS (health food stores), whole foods sometimes, or order it online via cosmos veganshoppe or veganessentials.com.
Smuckers also makes a marshmallow sundae topping (look in the ice cream topping section of a groc. store) that is vegan.
This sounds like a great alternative for making rice krispie treats! I haven't had them in years. I love me some rice mellow...but haven't bought it for the longest. Must get some!
awe, thanks!
i'm guessing vegweb "edited" my recipe. i spelled it "krispie" just like the treat name is spelled and now it says "crispy" over and over.
hahaha, that 's kinda crazy. Wonder why? Is the word "krispie" under copyright? I'm sure they are still tasty no matter how it is spelled :D
wayne, I get rice mellow at my hfs, but you can get it online too.
