Rice Balls

What you need: 

1 cup cooked long grain brown rice
1/2 cup chopped walnuts
1 small onion, minced
Ener-G Egg Replacer for 1 egg
1/4 teaspoon salt
1/8 teaspoon poultry seasoning
1/8 cup bread crumbs, or as needed to thicken
Thin mushroom gravy to cover

What you do: 

Combine ingredients, except gravy. Form into walnut size balls. Bake 20 minutes on baking sheet at 350. Remove from oven and cool. You may place in storage container at this time until ready to use or continue on with directions Place rice balls in large casserole. Pour gravy over top to cover and bake at 350 for 30 minutes.
Because there are no eggs, these will look and retain shape better if the gravy is not put on until ready to cook for the last 30 minutes.
