Rice Greco

What you need: 

1 cup long grain rice
1/3 cup wild rice
1 small yellow onion
1 small red onion
1 green pepper
1 red or yellow pepper
3 cloves garlic
4 tomatoes
1 package frozen peas
3 tablespoon olive oil
1/2 teaspoon white season all salt and pepper as desired

What you do: 

Peel and finely chop onions. Rinse peppers, remove seeds and cut into thin strips. In saucepan heat oil, saute onion 1-2 minutes then add peppers and saute 2 minutes more. Add rice, stir to mix for 1 min. Remove from heat and set aside. In bowl put 2 cups hot water, slit skin of tomatoes, immerse in water for 30 seconds, remove and peel tomatoes. Chop coarsely tomatoes, add to rice mixture. Add hot broth and return pan to stove; bring to boil, cover, reduce heat to medium and cook for 20 minutes. Add peas and seasoning 2-3 minutes before serving.
