Red Wine Quinoa Salad

What you need: 

4 cups spinach

1/2 cup cooked quinoa

1/2 cup chickpeas

1/2 cup chopped carrots

1/4 cup chopped walnuts

DRESSING

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp mustard

1 tsp sugar

1 clove of garlic, minced

dash of salt and pepper

 

What you do: 

mix the dressing together until it is dark yellow in colour
