Raw Applesauce

What you need:

3 apples
1 lemon
small handful sundried raisins (optional)
1 teaspoon cinnamon
few dashes ground cloves

What you do:

Squeeze lemon into a non-metal dish with the raisins. Grate apples over the lemon juice. Add cinnamon and cloves and mix.
I made this with two Braeburns and one Fuji, since that was what I had when I was craving dessert, so you might need to add some of your raw sweetener of choice if you use cooking apples.

SO HOW'D IT GO?

i use a microplaner for most of the apple and then make super small chunks with what's left when i make raw applesauce. that was it's a little bit chunky but still has the slurpy goodness of my mom's applesauce.  ;)b

Really good and simple too. I put the whole lemon (peeled and seeded) into my vitamix and blend it all up with the other ingredients. What a great idea to grate the apples though! I like adding in fresh ginger too. I made a bunch (9 apples worth) today and have some dehydrating for fruit 'leather'.
