Sugarplums

What you need:

1 cup raw almonds
3/4 cup raw pecans
3/4 cup sultanas
3/4 cup dried apricots
3/4 dried dates
1/4 cup fresh orange juice
(optional) wheat germ, grated or shredded coconut, or finely chopped nuts

What you do:

Pulse all ingredients except juice in a food processor until you have a coarse meal.
Add the orange juice and pulse until mixture sticks together.
Roll about 1 teaspoon of the mixture into a ball and roll in one of the optional ingredients. Repeat with all of the mixture. Place in the fridge for a while before serving to allow them to firm up.
Serving Suggestion: excellent served at the end of a meal as an alternative to the "after-dinner mint", or with tea at an afternoon tea.

SO HOW'D IT GO?

YUM....i didnt do much measuring....just a handful of each, added some flaxseeds and a bit of applesauce to moisten instead of the OJ. I'll be lucky if those things make it till tomorrow i could eat the whole thing right now!

Oh my gosh - these are to die for!! :o Just made them as a treat for my husband but I'm not sure if there will be any left by the time he gets home!  I didn't have any pecans so used walnuts, and also added some grated orange peel.  Rolled them in shredded coconut.  A wonderful "guilt-free" treat.
