Quinoa Breakfast Recipe

What you need: 

1 cup quinoa
1 teaspoon cinnamon, or 1 cinnamon stick
1 cup nondairy milk, optional (I use rice milk)
2 cups water
2 tablespoon raisins
1 banana
3-4 tablespoons carob powder (or 2 tablespoons cocoa)
2 tablespoons walnuts

What you do: 

1. Put the quinoa, cinnamon, and 3 cups liquid (1 of which can be nondairy milk, if you want) in a pot. Turn to high, and bring to a boil, then turn to low to simmer for 30 minutes.
2. When the quinoa is almost cooked, stir in the raisins so that they get large and plump. Mash the banana in a bowl, then stir in the carob or cocoa powder.
3. Stir banana mixture into the quinoa once it's cooked. If you like it a bit more porridge-y you can pour a bit more milk in as well. Spoon into bowls and top with the walnuts.
It's also wonderful with some fresh raspberries or strawberries.

SO HOW'D IT GO?

Yum, chocolate for breakfast!.  This is delicious, I like it a lil sweeter so I drizzled Raspberry Agave syrup on top, just  a tap.  Really good.  Thank you.

INCREDIBLE!!  ;)b

Made the following changes:
Rinsed quinoa before cooking...gets rid of the bitter taste from the saponins
Used unsweetened vanilla hemp milk for 1.5 cups
Added 1/2-2/3 cup of John Muir trail mix from  Living Tree Community ( www.livingtreecommunity.com)
Added about 7 oz. of canned organic pumpkin (I am a pumpkin freak)

Its so good.....I really have to keep myself from eating it all!

What a delicious way to start the day!  I used 2 cups vanilla soy milk and 1 cup water so it was creamy and sweet.  I topped it with toasted almonds and even my picky omni husband enjoyed a big bowl. Thank you as always!

did you use carob or cocoa?

Actually neither. I had some leftover Trader Joe's chocolate chips (vegan) in the freezer so I melted in about a 1/4th cup at the end. As you can imagine it was a very decadent breakfast!
