Quick & Easy Baker's "Egg"

What you need:

1 teaspoon baking powder
1/2 teaspoon baking soda
2 tablespoons flour
3 tablespoons water

What you do:

Simply add all four ingredients and whisk together until foamy [about a minute or so].
This is perfect for any sort of recipe. I've found this is equivalent to about 2 whole eggs.

SO HOW'D IT GO?

I used this to bake a birthday cake for my boyfriend. The batter looked absolutely delicious. But once I baked it and it cooled, it all fell apart when I tried to take it out of the pan. This could have been due to something else, but my mom seemed to think that it was the egg substitute. I'd use it again, but for cupcakes or muffins. I wouldn't recommend it for anything you have to shift around too terribly much, but it would probably be amazing for something smaller.

This worked very well. I was making some choclate chip muffins (the boxed duncan hines mix is vegan!) and I was out of apple sauce. This worked fine and they muffins are tasty. They're a bit dryer than when I use apple sauce but is a perfect substitute when in need. Thanks!

This was okay, but gave my carrot cake a noticeable baking soda aftertaste.  I prefer flaxseed (which I was out of).  Really good leavener though.  Watch that you notice this recipe is for TWO eggs (I didn't realize until I had prepared it - oops).
