Quick and Easy Pear, Cranberry and Spinach Salad

What you need: 

3 pears, chopped
cinnamon, to taste, optional
lettuce, chopped, as needed (I like romaine)
baby spinach, to taste
dried cranberries or cherries, to taste (I like craisins)
sliced almonds, to taste
raspberry vinaigrette dressing, to taste

What you do: 

1. Cook pears in water for about 10 minutes, adding more water as needed.
2. Season with cinnamon, if you like. Let them cool for a few minutes.
3. Mix lettuce, spinach, dried cranberries, almonds, and pears together.
4. Pour raspberry vinaigrette over it and enjoy.

SO HOW'D IT GO?

Looks great!! I'm going to make this for Thanksgiving dinner. I have a question...do you just fry the pears in water, or in vegan butter/oil?

When I read your comment, IdrilAsphodel, I decided to try this recipe. I usually don't like salads, especially if it's only vegetables with dressing (this is what most of people "cook" for me when they know I'm vegan and I'm starving ten minutes after the meal).

This being said, this salad is amazing :) A keeper, really. Good with tamari almonds.

Well, you have officially turned me from a salad hater to a salad lover in one bite. This recipe rocks. I left out the romaine (I was out) and used a raspberry-lime vinagarette recipe I found in Veganomicon. I will be serving this to all the salad haters that come to visit me.  ;)b Thank you!

This was really easy to toss together.  I used raspberry walnut vinaigrette, cranberries, no nuts, and I didn't fry the pears.  I also used iceberg lettuce and spinach.  5 stars yo

Awesome!  I did the pears in a bit of cinnamon, as suggested and that was perfect.  I made a raspberry vinaigrette with raspberry vinegar, oil, maple syrup and fresh tarragon all blended.  It was also a very pretty salad that looked good on the table (as did the rice we made).  Another "keeper" for the family.
