Potato/Bean Casserole

What you need: 

1 potato, free of bruises (brown, scrubbed clean)
1 8oz can garbanzo bean (undrained)
1-2 teaspoon of tamari or low-sodium soy sauce
1 tablespoon olive oil

What you do: 

Slice potato lengthwise and cut into slices about 1/4 inch. Heat the oil in a small saucepan and cook potatoes and garbanzo beans over low heat until browned. Add the tamari and continue to cook over low heat (covered) until the potatoes are done (about 15 minutes) and most of the liquid has evaporated. If a crispy crust is desired, place the contents in a shallow pan and broil for several minutes. This sounds strange, but I promise it is, indeed delicious. Most of all it is nutritious because it is high in fiber and a complete protein. It can be doubled.

SO HOW'D IT GO?

This recipe was pretty good! I actually tripled the recipe (for a family of three who wanted leftovers for the next days lunch) and it came out great. Next time I'm thinking of adding a vegetable in with it..maybe broccoli to add some color. Also my not so vegan family took this to be more of a side dish and heated up some chicken to go along with it. :(  Maybe a vegetable in it and a salad before or some bread to go along side will make it more fulfilling. thanks for the recipe!  ;D
