Delicious Potato Dijon Gratin
1 medium onion
1 teaspoon turmeric
2 tablespoon olive oil
1/3 cup flour
1/2 cup veggie stock or water
1/4 cup vegan Dijon mustard
2 cups soy milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon soy sauce
3-6 stalks green onions, chopped
1 teaspoon tarragon
6 medium potatoes, slices
Preheat oven to 375*F. Sauté onions, turmeric in oil on a medium heat until onions are soft. Stir in flour and stir constantly for about 2 minutes until you have a dry mix. Add slowly the soy milk, stock, mustard, salt, pepper, tarragon, soy sauce and green onions. Stir well until there are no lumps left. Set aside. Place sliced potatoes in a lightly oiled 9x13 inch baking pan and pour the sauce over the potatoes. Bake for 45-60 minutes, until lightly brown and the potatoes are soft.
This dish is delicious right out of the oven but I like it cold, too.

SO HOW'D IT GO?
I think the cooking time needs to be adjusted or something, because most of the potatoes weren't cooked after an hour and others were burned. That, and the dijon sauce was burned too. I omitted the onions but I'm not sure if that would affect anything.
