Potato Croquettes

What you need: 

2 large potatoes, cubed 1"
1 tablespoon vegetable oil
1/2 cup panko
2 teaspoons curry powder
salt and pepper, to taste
oil, as needed for frying

What you do: 

1. Boil potatoes until soft in salty water. (30 minutes or less) Drain the water and immediately add potatoes to a mixing bowl.
2. Add the other ingredients, and stir, mashing the potatoes a little. Do not mash them like you would mashed potatoes, leave some lumps for texture.
3. Shape the mixture into little thick pancakes, 2" in diameter, a little less than 1" thick. Heat oil for frying. Fry on a low to medium heat until golden brown on either side. (2-3 minutes per side)
Serve with ketchup! I think you could also made add in some peas. It's almost like a samosa with the curried potato taste.

SO HOW'D IT GO?

I'm not sure how you got 4-5 servings out of this. I followed the recipe and got maybe 10 tiny croquettes out of it. They didn't stay together, though. I don't know if I did something wrong, but this recipe didn't work for me at all.
