Pistachio Crusted Tofu

What you need: 

1 block tofu

1/2 cup chopped pistachios

1/2 cup vegan mayonaisse (I like Vegenaise)

3 cloves fresh garlic

1 handful fresh basil

3 tablespoons vegan parmesean

1 teaspoon Sea Salt

What you do: 

Preheat oven to 350 degrees F. Cut tofu into 3/4"-thick slabs and place side-by-side on greased baking sheet or baking stone. Mince garlic and chop basil. (Alternative: get frozen cubed garlic and basil- use 2 thawed cubes of each). Mix in vegenaise, sea salt, and vegan parm. Spread thick layer of mixture atop each slab of tofu. Sprinkle chopped pistachios over the mixture to cover completely. Bake for 10-15 minutes or until nuts look toasty.

Great served with brussels sprouts or broccolini :)

This was awesome. Not a huge basil fan so I added cayenne pepper instead. It came out amazing and super spicy.; Thanks for the recipe

This was really good! I added some extras...dill and oregano, and then added lemon juice onto the piece before eating. My only recommendation is to use a little less nayonaise because it can be overwhelming if you,re not into that flavor.
