Penne Pasta with Tomato Vodka "Cream" Sauce

What you need: 

1 lb. penne pasta
3 - 14.5 oz cans of stewed tomatoes
3 1/2 cups plain soy milk
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon dried oregano
2 tablespoons vodka
freshly ground black pepper, to taste

What you do: 

Cook soy milk on stovetop over medium heat until it reduces to 2 cups. Puree tomatoes in blender. Add milk and blend until well mixed.
In a large wok (or really big pot) cook tomato mixture for 15 minutes, stirring occasionally. If it starts to sputter, turn the heat down.
Add basil, salt and oregano. Cook 5 more minutes.
Add vodka, simmer 5 more minutes. Lastly, add pepper. Ladle over cooked penne pasta noodles.
I made this for Valentine's day and my omni DH loved it! Very easy too, the sauce can be pureed in the blender the night before to save time.

SO HOW'D IT GO?

I just made this and my meat eating man and I love it!! I ended up using 1 14.5oz can of Delmonte Zucchini and 1 32oz can of stewed tomatoes and blended it all together...I didn't use any garlic cause I didn't notice the comment till just now, but it is so yummy!!! thanks for this awesome recipe!

Really good! I have made this for my husband once and for my mother in another occation. They loved it! Thank you a lot, it is great! I only chnaged the dry basil and oregano for fresh, it was soooo good. Loved it. ;)b

Made this last night with me Betty and it was really tasty.
I did do some things to kick it up though, I added like half a head of garlic, and an onion to saute with some white wine and then added the soy milk(only 3 cups). I also only used one can of tomatoes but it was fine and then instead of regular vodka i used home made limoncello because I figured the sugar would cut the acidity and the lemon taste was kinda nice too.
I also used oregano, and rosemary.
You also need lots of salt and pepper for this.
This made for an incredibly flavorful sauce.
Oh and some sundried tomato too. Great base recipe.

Forgot an ingredient!  8 cloves of garlic, minced.  I put mine through a garlic press. 

In your large wok/skillet, saute the garlic in a little bit of olive oil for one minute.  Do not let the garlic brown!  Then add your tomato puree mixture and proceed as normal.
