Peel-A-Pound Soup

What you need: 

1 small head of cabbage
4 large onions
2 cloves of garlic diced
1 bunch of celery
1 large green pepper
1 large can diced tomatos
2 medium potatoes
4 carrots
1 box (2 pkgs) of vegan onion soup mix
3 cups vegetable stock

What you do: 

Clean veggies and cut into medium size pieces. Add all ingredients to stockpot/soup kettle and finish filling with water until it just covers the vegetables. Bring to a boil, and then reduce to a simmer and cook for 2-1/2 to 3 hours.

SO HOW'D IT GO?

This is sooooooooo tasty! I had a large head of cabbage, of which I used almost 3/4. I only added one large onion, and tossed in some peas toward the end of cooking. I used veggie bullion cubes (more cost effective, if you ask me) and no spices. The veggie flavor was enough on its own. This is going into the rotation! Thank you for a terrific, healthy, and satisfying recipe!  :)

This was rather good!

A few modifications that I made:
1) 4 cups of broth (which is a full carton)
2) Only had small cans of tomatoes, so used one with green chilies and one with basil and onion.
3) Added one heaping teaspoon of Marmite.

Makes a LOT of soup...

Looks yummy.  It certainly beats the heinous Pritikin heart patient diet "cabbage soup diet soup."  :)
