Peanut Butter Cups

What you need: 

1-1/2 cups vegan chocolate chips
1 cup peanut butter, reduced fat and creamy
1/4 teaspoon salt
1/2 cup powdered sugar

What you do: 

1. Cut the top half of the muffin cups to where they are about half the original height for 12 paper muffin cups.
2. Microwave the chocolate chips for about 2 minutes at 50% power in a glass or microwaveable bowl. Stir until creamy, you might need to microwave them a little more. Make sure you do not overcook them. Using a spoon or new paint brush spread the chocolate evenly within the muffin cups making sure you fill the crevices on the sides. Place the coated muffin cups in the freezer until the chocolate hardens.
3. In a bowl, combine the peanut butter and salt, then fold in the powdered vegan sugar. Microwave the mixture for 1 minute. Stir and allow to cool.
4. Spoon the peanut butter into the chocolate cups leaving a little room for the top layer of chocolate. You have the option of putting the top layer of chocolate on now or after the peanut butter has hardened in the freezer. Both ways work just as well in my opinion.
5. Place the cups in the freezer and wait an hour (or as long as you can).

These are A-mazing!! I made them for my boyfriend for our anniversary but I'm not sure they are going to last that long!!
I almost ran out of chocolate for the topping so I think I should use less on the bottoms next time. Also I added soya butter to the melted choc to make it easier to spread. Best peanut butter cups ever!!

Uh, YUM.
I made no modifications and they came out awesome. I didn't cut my muffin cups, but I can see how that would make it easier. I loaded up the PB, and frozen chocolate seriously made my day. It tastes like a Reese's PB cup, but better: BECAUSE IT'S VEGAN!!!!!

I only had one because I don't like chocolate peanut butter cups but I made mine with peanut butter and preserves/jam and it was good. Everyone else loved them. I used more chocolate chips because I made mine really big and thick, I didn't trim the cups and I didn't use any salt or sugar in the PB, I think that would have made them WAY too sweet. My nan said next time she wants me to make her PB&fluff ones. :)

Since you freeze these, you could probably put ice cream inside of them for a really sweet summer treat.

This is the recipe that I use, & it makes the PB cups have the unique texture & sweetness that the original candies have. You do everything the same, other than these are my fillings.

1 c. peanut butter (smooth or crunchy)
2 sticks vegan butter at room temperature, or vegetable shortening
1 lb. powdered sugar
1 1/2  c. graham cracker crumbs

The graham cracker crumbs really make a huge difference (but no one would ever guess there is graham crackers in them).
& I use all natural peanut butter so it's a little drier than other peanut butters, so I add a touch more oil if its looking a little dry.

You can also just spread the PB mixture on a cookie sheet, & then spread a thick layer of chocolate on top (it's much faster than filling up the cups)

Made these last night, they are sinfully delicious! I think I would use smaller muffin cups next time, as they are really sweet... but oh soooo good!

Made these again;  this time I shared them with a buddy.  He misses the PBC's here as much as I do. 

His socks were knocked off!! 

Now I have a standing order to make these for several people!!  :-D

Well, I'm currently living abroad and one thing I get a craving for is these little PB cups; can't find them at a store here.

Can you edit recipes? Because this really should be edited to say powdered sugar at the beginning! I always pull out my ingredients from the top list, so I used sugar, not powdered sugar. Yes, I should have thought "that doesn't sound right", but I didn't. It came out really grainy and not what I was expecting  >:( I will try it again some day with the powdered sugar, but I'm really bummed now! At least they came out pretty...
