Peanut Butter Cookies

What you need: 

1 cup real maple syrup
1/2 cup canola oil
1 cup natural peanut butter
2 teaspoons vanilla
2 cups unbleached flour

What you do: 

Pre-heat oven to 350.
Combine maple syrup, canola oil, peanut butter, and vanilla in medium size bowl. Add flour and mix to combine. Use your hands to roll the dough into teaspoon size balls (it's okay to add a bit more flour in needed for consistency).
Place the rolled balls onto a baking pan lined with parchment paper. Press down each ball with tines of fork.
Bake for 20 minutes. Allow to cool for 5 minutes and then remove from pan and place on wire rack to cool completely!
That's it! Great cookies with only 5 ingredients and no raw sugar!

SO HOW'D IT GO?

the recipe was easy and very quick, but the cookies seemed...off.
My room mate said she thought they needed salt, but I didn't like the texture, either.
eh, they weren't horrible, but I won't make them again.

curious, what was the texture?? i think maple syrup would make them chewy?? maybe subbing some w/ reg sugar would help?

Made these tonight because I was craving something sweet!
They were super easy to make and delicious!
I added oatmeal and chopped walnuts to them as well :) Delicious

MMMMM! Yummy!  I made these today but added chopped raw peanuts.  My kids and their friends ate them all up within an hour!  Great recipe, thanks!
