Peanut Butter, Banana, Chocolate Chip Bread

What you need: 

Bread:
2 1/2 cups flour
1/2 cup white sugar
1/2 cup brown sugar
1 tablespoon baking powder
1/4 teaspoon ground cinnamon
2 ripe bananas, mashed
1 cup nondairy milk (I use soy)
3/4 cup peanut butter
3 tablespoons oil
1 teaspoon vanilla
1/3 cup applesauce
1 cup chocolate chips

Frosting:
3 tablespoons peanut butter
2 tablespoons vegan margarine
1 cup powdered sugar
1 teaspoon vanilla
1 tablespoon nondairy milk

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Grease two 8x4x2" loaf pans. Stir together flour, sugars, baking powder and cinnamon.
2. In another bowl combine bananas, milk, peanut butter, oil, vanilla, and applesauce. Add to flour mixture, and stir until combined.
3. Stir in chocolate chips. Pour into prepared pans. Bake 50 to 55 minutes or until toothpick comes out clean.
4. For frosting, melt peanut butter with margarine in a saucepan. Stir in powdered sugar and vanilla. Add milk until it is of spreading consistency.

SO HOW'D IT GO?

Ooooh I wish I had made the frosting! I made these into muffins, and they were terrific, but I think they would've been much better with the frosting.

i made this using white whole wheat flour, and I think that may have been why it turned out a little dry.  next time i will probably do half white, half whole wheat, and maybe add a little extra soymilk or applesauce to moisten it up a bit.  i didn't add the frosting because i was lazy and just making this to use up some very ripe bananas, and it was just fine without it.  really good!

This is AMAZING!!!!
I made a few small adjustments.  I subbed 1/2 cup of the flour for soy flour and for the rest used Whole Wheat.  And I used homemade applesauce and subbed it for half the soy milk.  I still ended up adding a full cup of soymilk though, because the batter still wasn't completely wet , and it came out SO MOIST!
The frosting is GREAT!
I'm definitely making this for my birthday cake. ;D

This is so good. I took some advice from other reviewers and added more peanut butter and I also used half ww flour. Will definately make this again.

yummy...i halved the recipe except the applesauce on accident(which i also added more of to replace the oil) and the vanilla, also doubled the cinnamon from the original and did half whole wheat and half white.  no icing or chocolate chips. veryyyyy moist prob cause of the apple sauce but something I will def make again soon!  ;D

This is INCREDIBLE. My whole family LOVES it...this is a recipe I will be making regularly in my household!! It makes really yummy muffins too.  ;D

pretty good...not super moist, though.  but very tasty.  I put big chocolate chunks on the top...yum :)

I made these into muffins, and they were so good warm from the oven. I replaced the oil with extra peanut butter,  and you definitely do not want to add anymore bananas then suggested. They aren't good the day after so eat them as fast as you can!

I can't believe how much people love this recipe.  I made it for my brother and best friend in NYC.  I have to ship it to each of them.  They keep calling asking for more. I just made 2 more in round pans.  I have modified them slightly by adding buckwheat honey and less processed sugar.  I am a pescatarian not vegan and so I like using honey as a sweetner.  I added dark chocolate along with semisweet and all natural peanut butter.  I love, love, love this recipe.  Thanks so much for the recipe.
