Pasta with Avocado and Tomatoes

What you need: 

1/2 pound spaghetti
2 fresh tomatoes, cubed
1 avocado, cubed
3 garlic cloves, minced
1/4 cup olive oil
vegan parmesan cheese, to taste, optional

What you do: 

1. Cook pasta as directed on package and drain.
2. Place all ingredients in a bowl and stir. Serve.

SO HOW'D IT GO?

So delicious... I also added some corn I had steamed the night before and it sits amazingly for lunch at work with no heat... don't really need radiation on my food! Awesome recipe! ;)

So good! My husband (who isn't veg) loves this and asks about it if I go to long with out making it. It is so good with the soy sausage but I just use a little so not to over power the other ingredants I also like to use a little extra avocado when I have it. Yum!

I have to say this is my all time favorite recipe!!! Love it with lots of balsamic vinegar... very delicious!

Hubby (who is not veg) and I love this recipe! Simple, quick, gorgeous colors, and delicious!  I add in fresh basil (chopped), too.  Wonderful!

i've done this before using bowtie pasta and i never used the oilve oil except to add to the water during cooking. if you add the avocado straight away it melts like butter. its yummy!

I was in need of a quick and yummy lunch. Made this today, and it came out so good! I wish I made more... I added red pepper flakes and salt. I am excited to try variations of it :)

this was really good.. i added some fresh basil and a little salt, left out the oil & it was a really quick easy meal.  a nice way to use avocado in an entree thats not mexican or a sandwich.

I've made a similar dish with pine nuts and soy sausage. The combination of angel hair pasta and avocado is amazing though so many variations are possible. As an italian girl, I also love the additional spalshes of some good olive oil. Good recipe : )
