Overnight oatmeal
What you need:
1/2 cup old fashioned rolled oats (not instant)
1 tablespoon agave nectar
1 teaspoon vanilla extract
few dashes cinnamon, to taste
1/2 cup vanilla nondairy milk (I use almond)
1 banana, sliced or diced
nuts, to taste, chopped (optional)
What you do:
1. Mix all ingredients together.
2. Let sit in fridge overnight or at least 3 hours to give enough time for the oats to absorb the milk.
If this doesnt sound very appealing to you cold, you can always add a few more splashes of milk and pop it in the microwave. It's good either way! Its perfect to make the night before if you seem to have jam packed mornings, and it's so incredibly filling, and not to mention good for you too.

SO HOW'D IT GO?
Don't know why I didn't think of this. My 2 year old often wakes up at an ungodly early hour and demands oatmeal - this makes it so easy!
Raisens are so good in overnight oats. Like VeganRun said, they plump up and are so tasty! I like to add my banana in the morning though, I'm too scared to leave it in overnight >.> Great basic recipe that you can easily adjust. Just remember to keep it roughly 1:1 on the wet to dry (as VeganRun also said!). I prefer my oats warmed just slightly in the morning, but try em cold first, you might be in love!
I've heard a lot about overnight oatmeal lately, so I was happy to give this a try. I also used a nearly empty peanut butter container, as this has been recommended on other sites. Basically, we need to know it's a 1:1 ratio of oats and liquid, then adjust to flavor. I omitted the agave and added in a small handful of raisins, which plumped up nicely overnight. I didn't add my banana and nuts until the next morning (after I had microwaved it for 1 minute to warm it up).
Very convenient. I'm sure I'll be using this many evenings/mornings to come!
So yummy and flavorful, next time I'll definitely be trying it hot!
