Outstanding Oatmeal Cookies

What you need: 

3/4 cup soy or canola margarine
3/4 cup sucanat
1/2 cup non-refined sugar OR 1 + 1/4 cup sucanat total
1 Ener-G Egg Replacer
2 tablespoon water
2 teaspoon vanilla
3/4 cup flour
3/4 teaspoon baking soda
1 teaspoon cinnamon (optional)
3 cups oats
1 + 1/2 cup raisins or non-dairy chocolate chips (optional)

What you do: 

Preheat oven to 350 degrees. Cream together the margarine, vegan sugar, egg replacer, water, and vanilla. Beat until well mixed, kind of fluffy.
In a separate bowl, mix flour, baking soda, and cinnamon. Add to first mixture, and beat on low until blended. Add oats and raisins/chips. Drop by tablespoonfuls on greased cookie sheets. Leave in drops for chewy cookies, but press flat for crispy cookies.
Bake for 10-12 minutes, or edges are golden.

SO HOW'D IT GO?

Hi all,

I didn't have margarine, sucanat, or vanilla, so here's my variation of this recipe with oil:

3/4 cup margarine high heat safflower oil
3/4 cup sucanat non-refined sugar
1/2 1/4 cup non-refined sugar (to absorb more oil)
1 Ener-G Egg Replacer
2 tablespoon water hot tea
2 teaspoon vanilla maple extract
3/4 cup unbleached flour + 1/8 cup whole wheat flour (to soak up more oil).
3/4 teaspoon baking soda
1 teaspoon cinnamon     
3 cups oats

Using oil, the dough didn't spread much, so I flattened them down.
Needed to bake 14-16 minutes until they turned golden brown on the edges.
Once they cooled down, they got a lot crunchier/crisper, to the point they were like cookie-shaped granola bars!

They were the yum!  ;)b
