Orange Glazed Veggie Stir Fry
1 garlic clove, minced
1 green onion, chopped
1/2 teaspoon fresh ginger, minced
1/2 tablespoon orange juice
1/2 tablespoon lemon juice
3/4 tablespoon rice vinegar
1 tablespoon soy sauce
1/8 cup water
1/8 cup sweetener
1/4 red pepper, sliced
1 cup broccoli florets
1/2 cup sliced mushrooms
10 baby carrots, halved lengthwise
1.) In a small bowl, combine ingredients from orange juice up until and including sweetener. Mix well with a small wisk.
2.) In a small skillet over medium heat, add the garlic, ginger and green onions.
3.) In wok or other large skillet, add peppers, broccoli, mushrooms and carrots over medium heat.
4.) Once garlic and ginger has began to brown, add sauce mixture and reduce heat to a simmer. Simmer for 3 minutes then add into skillet with veggies.
5.) Cover skillet and let sauce reduce with veggies for a few minutes.
6.) Serve mixture over rice to absorb extra liquid and ENJOY!
SO HOW'D IT GO?
I was making this for five people, so for the sauce I used 2 1/2 tablespoons of orange juice, 2 tablespoons of lemon juice, a tiny bit of sugar, a little bit of white wine vinegar since I didn't have any rice vinegar and just one tablespoon of soy sauce because I didn't want it too salty. I also left out the pepper because I didn't have one and instead I roasted a courgette before adding it to the stir fry just before the sauce. The sauce was maybe slightly too citrussy, so next time I'll put in a little less lemon juice. But it went down really well, I'll definitely be making it again! :-)
Sauce is DELICIOUS! It is very sweet tasting which is perfect for me but my bf who hates anything sugary didn't like it too much. I just kind of threw together all the veggies I needed to use up and it was really really good. Thanks for posting this!
We really enjoyed this. I used yellow onion instead of green and powdered ginger instead of fresh, because its what I had. Veggies I used were carrots, broccoli, bok choy and bell pepper. I also added some sliced up veg chick'n nuggets that were breaded. I baked them in the toaster oven and added them to the veggie/sauce mix at the end, they were pretty good in there. I also added a dash or two of crushed red chilies and some hot sauce, just cause I like it spicy and about 6 cloves of garlic, because we LOVE it. Thanks for the recipe. Love the citrus flavors and it was so easy to make too!
I loved it. As others before me I added my own twist and put snow peas in it with a little bit of rehydrated bean threads and ate it as a wrap!!

I only made the sauce that goes with this recipe. I used apple cider vinegar rice vinegar and I added mango juice instead of the lemon juice. It made a very refreshing, fruity sauce that I poured over steamed veggies.

I used honey as the sweetener and doubled the orange juice and it was great!
